Walnut Puff Pastry Cookies Recipe

These light, crispy, and nutty walnut puff cookies are perfect for tea time or as a delightful homemade treat.

 

 Ingredients: 

- 2 egg whites 

- ½ cup (100g) granulated sugar 

- 1 teaspoon vanilla extract 

- 1 cup (100g) walnuts, finely chopped 

- 1 tablespoon cornstarch 

 

 Instructions: 

1️. Preheat the oven to 300°F (150°C) and line a baking tray with parchment paper. 

 

2️. Whip the egg whites in a clean, dry bowl until soft peaks form. Gradually add the sugar while continuing to beat until the mixture becomes thick, and glossy, and forms stiff peaks. 

 

3️. Add vanilla extract and gently fold in the chopped walnuts and cornstarch using a spatula. Be careful not to deflate the mixture. 

 

4️. Spoon small portions of the batter onto the baking tray, leaving some space between each. 

 

5️. Bake for 20–25 minutes or until the cookies turn golden and crispy. 

 

6️.  Let them cool on the tray for a few minutes before transferring them to a wire rack.
