Sparkling Watermelon Mint Cooler with Spiced Green Tea

This refreshing mocktail is a summer explosion in a glass! The sweetness of watermelon mingles with the coolness of mint, all balanced by the subtle spice of a cardamom-infused green tea.

 

Ingredients:

 

 1 cup water

 1 green tea bag

 2-3 cardamom pods, crushed slightly

 1/2 cup seedless watermelon, chopped

 1/4 cup freshly squeezed lime juice

 2 tbsp honey (or to taste)

 Sparkling water, chilled

 Lime wedges and mint sprigs for garnish (optional)

 

Instructions:

 

  1. Spice up the tea: Bring the water to a boil. Add the crushed cardamom pods and green tea bag. Steep for 3-5 minutes depending on desired strength. Remove the tea bag and cardamom pods. Let the tea cool completely.
  2. Blend the watermelon: In a blender, combine the chopped watermelon and lime juice. Blend until smooth. Strain the mixture to remove any pulp, if desired.
  3. Mix and chill: In a pitcher, combine the cooled spiced green tea, watermelon mixture, and honey. Stir well to combine and adjust sweetness to taste. Refrigerate for at least 30 minutes for the flavors to meld.
  4. Serving time: Fill glasses with ice. Top with chilled sparkling water and garnish with lime wedges and fresh mint sprigs, if desired.
