Qottab Recipe (Persian Pastry)

Qottab is a traditional Persian pastry, usually deep-fried, but this baked version offers a healthier alternative while keeping its delicious taste and flaky texture. These delicate pastries are filled with a sweet nutty mixture and dusted with powdered sugar, making them a perfect tea-time treat! 

 

 Ingredients: 

 For the Dough: 

- 2 cups all-purpose flour 

- ½ cup unsalted butter (melted) 

- ½ cup plain yogurt 

- 1 egg yolk 

- 1 tbsp rose water 

- 1 tbsp sugar 

- ½ tsp baking powder 

 

 For the Filling: 

- 1 cup ground walnuts (or almonds/pistachios) 

- ½ cup powdered sugar 

- 1 tsp ground cinnamon 

- 1 tbsp rose water 

 

 For Coating: 

- Powdered sugar (for dusting) 

 

 Instructions: 

 1. Prepare the Dough: 

1. In a large bowl, mix melted butter, yoghurt, egg yolk, sugar, and rose water until smooth. 

2. Add flour and baking powder gradually, mixing until a soft dough forms. 

3. Knead lightly, wrap in plastic, and refrigerate for 30-45 minutes. 

 

 2. Make the Filling: 

1. Combine ground walnuts, powdered sugar, cinnamon, and rose water in a bowl. 

2. Mix well until you get a slightly sticky mixture. 

 

 3. Shape the Qottab: 

1. Preheat the oven to 180°C (350°F). 

2. Roll out the chilled dough on a floured surface to about ⅛-inch thickness. 

3. Cut into small circles (around 2-3 inches in diameter). 

4. Place a teaspoon of filling in the centre of each circle. 

5. Fold over into a half-moon shape and press the edges to seal (you can use a fork for a decorative edge). 

 

 4. Bake: 

1. Place the qottabs on a lined baking tray. 

2. Bake for 15-18 minutes or until lightly golden. 

 

 5. Coat & Serve: 

1. Allow the qottabs to cool slightly. 

2. Dust generously with powdered sugar before serving.
