Ingredients:

 For the Cream Layer:

- 250g mascarpone cheese

- 200ml heavy cream

- ½ cup (60g) powdered sugar

- ½ cup (120g) pistachio paste (or finely ground pistachios)

- 1 tsp vanilla extract

 For the Layers:

- 1 cup strong brewed espresso (cooled)

- 2 tbsp sugar (optional, for sweetening the coffee)

- 200g ladyfinger biscuits (Savoiardi)

- ½ cup crushed pistachios (for topping)

Instructions:

1. Prepare the Cream

- In a large bowl, whisk the mascarpone cheese and pistachio paste until smooth.

- In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

- Gently fold the whipped cream into the mascarpone mixture until fully combined.

2. Prepare the Coffee Mixture

- Brew a strong espresso and let it cool.

- Add sugar if you prefer a sweeter coffee flavor.

3. Assemble the Tiramisu

- Dip each ladyfinger biscuit into the coffee for 1-2 seconds (don’t soak too much!).

- Arrange a layer of soaked ladyfingers at the bottom of a serving dish.

- Spread half of the pistachio cream over the ladyfingers.

- Repeat with another layer of coffee-dipped ladyfingers and top with the remaining pistachio cream.

4. Chill & Serve

- Sprinkle with crushed pistachios for extra flavor and crunch.

- Cover and refrigerate for at least 4 hours (overnight is best for a perfect texture).

- Serve chilled and enjoy this luxurious Pistachio Tiramisu!
