Pistachio Loz (Persian Pistachio Sweet)

Pistachio Loz is a traditional and popular Persian sweet with a soft texture, rich flavor, and delightful aroma. This vibrant treat is made from a combination of pistachio powder, sugar, and rosewater, making it a nutritious and energy-rich delicacy. In addition to its beautiful appearance and exquisite taste, Pistachio Loz is an excellent choice for serving at gatherings and special occasions.

 Ingredients: 

- 2 cups pistachio powder 

- 1 cup powdered sugar 

- 2 to 3 tbsp rose water  

- 1/2 tsp ground cardamom 

 

 Instructions: 

1. Sift the dry ingredients: Mix pistachio powder and powdered sugar, then sift them together to ensure a smooth texture. 

2. Add cardamom: Stir in the ground cardamom to evenly distribute its aroma and flavor. 

3. Incorporate rose water: Gradually add rose water while kneading the mixture until a soft, pliable dough forms. If the dough is too sticky, add a little more pistachio powder. 

4. Shaping and cutting: Place the dough on a flat surface and roll it out to about 1 cm thickness. Cut into diamond or square shapes using a knife or cookie cutter. 

5. Resting time: Arrange the pieces on a tray and let them sit at room temperature for a few hours to firm up slightly. 

6. Optional decoration: Sprinkle some crushed pistachios or place a pistachio sliver on each piece for an elegant touch. 

 

 

 Tips: 

- Adjust sweetness by increasing or decreasing the powdered sugar. 

- If the dough becomes too dry, add a few extra drops of rose water. 

-  Store in an airtight container to keep fresh for longer.
