Persian Raisin Cookies (Shirini Keshmeshi) Recipe
Shirini Keshmeshi is a classic Persian raisin cookie, known for its crispy edges, soft center, and bursts of sweet raisins. This simple and quick recipe is perfect for tea time or as a light dessert!
Ingredients:
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 ½ cups (180g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cup (120g) raisins
Instructions:
1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Cream the butter and sugar together in a bowl until light and fluffy.
3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
4. Sift the flour, baking powder, and salt, then gradually add to the wet ingredients. Mix until just combined.
5. Fold in the raisins, ensuring they are evenly distributed in the dough.
6. Drop spoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
7. Bake for 10-12 minutes or until the edges are golden brown.
8. Let the cookies cool on the tray for a few minutes, then transfer them to a wire rack.
